
Lady finger is a light biscuit that is best known as the cake center of tiramisu.
These lady fingers are very light in weight and stiff when dry. The top is lightly coated with sugar. When dipped in liquids such as coffee, the pastry soaks up the fluid quickly and becomes very fragile. A desirable trait, I reckon, for the making of tiramisu.
